Mindful Delights Gluten-Free Vegan Pantry

Agave Nectar – Agave nectar (sometimes called agave syrup) is most often produced from the Blue Agaves that thrive in the volcanic soils of Southern Mexico. Agaves are large, spiky plants that resemble cactus. The nectar made from this plant is known in Mexico as “honey water.” The carbohydrate in agave nectar has a low glycemic index, which provides sweetness without the unpleasant “sugar rush” and unhealthful blood sugar spike caused by many other sugars.

Apple Cider Vinegar – The apple cider vinegar we use is made with the finest organic apple juice which is naturally fermented. Raw and unpasteurized, patiently aged in cedar wood vats. Apple Cider Vinegar is a traditional healthy food which has been used for centuries in hundreds of ways.

Apple Sauce – We use the best local organically grown apples, and they are slow cooked for hours with lemon juice and brown sugar.

Baking Powder – Baking powder is a chemical leavener which typically consists of baking soda (alkali,) acids (cream of tartar,) and a starch (which is sometimes made with wheat or typically corn.) The baking powder we use is made with a gluten free baking soda and cream of tartar.

Baking Soda– Baking soda contains one ingredient which is sodium bicarbonate.

Brown Rice Flour – has a slight nutty flavor. Brown rice flour still contains the bran, which means that it is higher in fiber, nutrients, and fat and contains more protein than white rice flour.

Brown Sugar – is freshly made with organic molasses and organic evaporated cane juice.

Canola Oil – We use organic canola oil. Canola oil is pressed from tiny canola seeds produced by beautiful yellow flowering plants of the Brassica family. Cabbages and cauliflower are also part of the same botanical family!

Chocolate Chips – We use a gluten-free, vegan, chocolate chip that is also nut and soy free. It contains evaporated cane juice, chocolate liquor, and non-dairy cocoa butter.

Cinnamon – We use a fresh organic cinnamon.

Cocoa Powder – Our cocoa powder that we use is gluten free and vegan. Cocoa powder is made when chocolate liquor is pressed to remove most of its cocoa butter. The remaining solids are then processed to make a fine powder.

Coconut Oil – We use organic virgin coconut oil.

Cream of Tartar – We use organic cream of tartar. Cream of tartar is a mixture of potassium hydroxide with tartaric acid. It is created from the residue/sediment of the wine.

Evaporated Cane Juice – both sugar and evaporated cane juice are derived from sugar cane; the difference between the two is found primarily in the refinement process that each undergoes. White sugar goes through a series of refinement steps that remove color and many nutrients. Evaporated cane juice, on the other hand, retains important vitamins, such as riboflavin and vitamin B, as well as amino acids and fiber that its refined counterpart lacks, thereby providing more nutrients per calorie consumed than sugar.

Guar Gum – guar gum is best described as a food thickener. Guar gum is made from the extraction of a bean from the guar plant which is typically found in tropical Asia.

Molasses – The type of molasses we use is an organic unsulphered black strap molasses. Blackstrap molasses comes from a third boiling in the sugar cane process.

Oat Flour – The gluten free oat flour that we use is made from the purest gluten free oats.

Oatmeal – These are the purest gluten free oats.

Palm Shortening – This is a non hydrogenated trans-fat free palm oil made with 100 % organic expeller pressed palm oil.

Peanut Butter – Our peanut butter is freshly made with fresh roasted organic peanuts, sea salt, and organic canola oil.

Potato Starch – the potato starch is made from separating the starch from the potato cell walls and made into a powder form. It is a gluten free thickener.

Quinoa Flour – pronounced (keen-wa) is flour produced from quinoa which is the most nutritious grain available and is also one of the oldest cultivated grains in the world. Quinoa is commonly used in vegan and gluten free baking. It is high in protein, calcium, and iron.

Rice Milk – Rice milk is typically made from mostly brown rice.

Sea Salt – the sea salt we use is a solar sea salt, which is a pure present from nature. It is made with the sun and the sea.

Tapioca Starch – Tapioca starch is refined white flour made from the cassava plant. Tapioca starch is gluten free and is often added to baked goods as a binder.

Vanilla – since most vanillas on the market have corn or gluten in them as well, we make our own with fresh organic vanilla bean and gluten-free potato vodka.

White Rice Flour – White rice flour is ground from rice after the bran and germs have been removed.
